Where does it say that Eileen Prince is in Quidditch? (And, even though Snape officiated a Quidditch match, we can't assume that he used to play Quidditch)
And, even though Eileen was in Advanced Potions, it doesn't mean that she's anywhere as good as Snape. Slughorn doesn't expect as much from his Potions students (accepting "E" for OWLS). Even Draco and Hermione are nowhere as talented as child!Snape when it comes to Potions.
