Yes exactly! this is the good thing about H/D, they may not want to, but they DO care.
I think that with H/S you do see that Harry repeatedly makes Snape lose control and do furious and strange things, like when he goes berserk at the end of PoA when Sirius escapes, or starts to walk around with his arms outstretched to catch invisible enemies in front of fake!Moody. But even so I don't think Harry in these situation *wants* to unhinge Snape at all but would prefer it if he could go unnoticed. We know Harry is *capable* of wanting to make someone lose it, he actively tries with Dudley in OotP. And Snape's more forceful reactions are usually tied in with the Maurauder generation or the Order, Harry's presence or personality alone isn't enough.
With H/D, the reaction seems to be more directly linked to the other person, and Draco's comments or action *intends* to provoke, resulting in Harry flying after the rememberall, or punching Draco with the snitch.
