According to the director's commentary that scene was filmed thinking they wanted Gandalf and Pippin to come straight from Rohan and to the rescue, and that's why Pippin is there. Then they made the "riding through the city" shots that establish the geography of Minas Tirith and wanted to introduce the city (and Denethor?) before Faramir comes back. I'm not sure about the two days, I suppose they way they let Faramir bring Frodo and Sam to Osgilliath made their separation time less than in the books, but as little as two days? Anyhow, it's in the commentary, over the scene where Gandalf and Pippin ride out. :)
